We're stoked to bring you this incredible anaerobic natural process coffee from Villacorzo, Chiapas in Mexico. Anaerobic fermentation is a process where fermentation happens in an oxygen-free environment. In this method, cherries are sealed in oxygen-free barrels for 10 days, allowing yeasts to create winey and fruity flavors, along with a full, silky body in the coffee seeds. Post-roast, it sports a crazy-delightful bouquet of frangipane, raspberry and maple syrup.
